Classic Eggs Benedict

Ingredients:
• 2 English muffins, split
• 4 large eggs
• 4 slices Canadian bacon
• 1 tbsp white vinegar
• Hollandaise sauce ingredients:
- 3 egg
yolks
- 1 tbsp
lemon juice
- ½ cup
unsalted butter, melted
Instructions:
- Poach
eggs in simmering water with vinegar (3 mins for runny yolks).
- Toast
English muffins and warm Canadian bacon.
- For
hollandaise: Whisk yolks and lemon juice over double boiler until
thickened.
- Slowly
drizzle in melted butter while whisking.
- Assemble:
muffin half + bacon + poached egg + hollandaise.
